Scotch Eggs

This dish is really mouth-watering, loved by one and all, whether big or small. The reason I am putting this up is over the years, whoever has eaten this, has asked for the recipe. The quantity shown in this recipe makes 10 scotch eggs.

Ingredients:

Eggs – 5

Potatoes – 4-5 large sized

Ketchup

Salt

Oil for deep frying

Beaten Egg – 1

Bread crumbs – As required

Preparation:

1. Boil the eggs and the potatoes.

2. Cut the eggs in half. Remove the yolks and mash the yolks in a bowl. Add ketchup and mix well.

3. Fill the yolks back into the halved eggs.

4. Mash the potatoes and add salt. Coat the halved and filled eggs with the mashed potato.

5. Beat an egg in a large mouthed bowl. Also keep the breadcrumbs for dredging ready in another wide-mouthed bowl.

6. Roll the potato-covered eggs in the beaten egg followed by the bread crumbs.

7. Heat oil in a wok. The oil should be sufficient for deep-frying.

When the oil is hot, add the egg into the oil.

Turn it over once brown.
