Stir-fried Ladies Finger with Carrot and Potato

This dish is easy to make and is definitely a quick fix. The colours make the dish look really tempting.


Ladies Finger – 250 gms

Carrots – 100 gms

Potato – 100 gms

Onion – 1 medium sized diced

Coriander powder – 1/2 tsp

Cumin powder – 1/2 tsp

Dried Mango powder -  1 pinch

Pepper – 1/2 tsp or to taste

Salt to taste

Olive Oil: 2 tsp


1. Chop the potatoes and carrots into 1 inch size wedges. Also chop the ladies finger into 1 inch size pieces.

2. Parboil the potatoes and carrots for around 2 minutes.

3. In a wok, heat the oil and fry the diced onion till soft.

4. Mix the dried mango powder, coriander powder and cumin powder with the ladies finger and add to the wok once the onions are soft.

5. Cook the ladies finger till the stickiness disappears, stirring continuously.

6. Add the parboiled potatoes and carrots to the ladies finger. Add the salt and pepper to taste.

7. Cover the wok and cook for around 10 minutes on low fire till cooked. It should not be overdone….the carrots should remain crunchy and the vegetables should retain their colour.

Your dish is done!
