Dudhi / Bottle Gourd Halwa

Doodhi Halwa

This is an Indian sweet made from Dudhi which the hindi name for bottle gourd. It is a simple recipe and makes a great desert.

This is made from the slender bottle gourd which should be really tender.


1 Bottle Gourd / Dudhi – 500 gms approximately

Sugar – around 4~5 heaped tablespoons (to taste)

Cardamom – 4-6 pods

Nutmeg powder -  ½ tsp

Ghee – Around 2 tablespoons (Ghee may be replaced with unsalted butter, however ghee is preferred)

Milk – ½ litre

Cream – approx. 2 tbsp (you may add more to increase the richness of the final dish)


  1. Grate the bottle gourd after pealing off the skin.
  2. In a heavy bottom pan, heat the ghee and add the cardamom pods. Fry for around a minute. Then add the grated dudhi / bottle gourd. Let it cook for around 5 minutes.
  3. Later add the milk, cream, sugar and nutmeg.
  4. Let it cook till it dries.
  5. Once all the liquids have evaporated, your dish is ready.
