Mangalorean Pork Vindaloo with Yam

This Vindaloo is typical to Mangalore where they add Yam pieces to their Pork Vindaloo rendering it a different taste and enhancing the lovely flavours of pork.

This is normally served with sannas or thick dosas.


Pork – ½ kg cut into medium-sized pieces

Onions – 2 large sliced

Garlic – 4 large flakes finely cut

Ginger – 2” piced cut into juliens

Green chilies – 2 slit in the middle

Bafat Masala – 2 tbsp

Vinegar – 2 tbsp

Bay leaves – 2

Cinnamon – 2” piece roughly broken

Yam – 250gms cut into approximately 1” size cubes

Salt to taste


  1. Mix the pork pieces with the onions, garlic, ginger, green chillies, bafat masala and vinegar. Marinate for at least 2~3 hours. It tastes better if marinated overnight.Pork Vindaloo preparation
  2. Add the bay leaves and cinnamon sticks and put on a high fire till it bubbles. Please note no water is to be added.
  3. Once it bubbles, lower the flame. After the meat has cooked for around 15 mins., add the pieces of yam
  4. Let it cook for approximately 15 mins more or till the meat and yam are cooked.
