Guava Cheese, also known as Perad, is one of the must-have Christmas sweets. At our house, it is made not only at Christmas, but whenever we manage to get the good pulpy guavas required to make this. It is loved by every member of the family. Though it requires a good deal of energy to continuously stir during the preparation, it is well worth the effort.

My mother is quite famous for her Guava Cheese. Here’s her recipe……


Guavas – approximately 1 kg. Ensure the guavas are absolutely ripe and big in size to ensure a good amount of pulp.

Sugar – depending on the amount of pulp obtained from the guavas (amount of sugar required is equal to the amount of pulp obtained

Butter – 1 tbsp

Red edible liquid colour

Lime juice from 1 medium-sized lime

Ghee or Butter to grease the tray


1.  Cut the guavas and de-seed them.

Guava cheese peradGuava Cheese or perad2.  Place the cut and deseeded guava in a pressure cooker with approximately ½ cup water. Pressure cook for two whistles. You can also place in a heavy bottom covered pan, but this may take a longer while.

Once steamed, it will look like the picture below.

3. Grind the steamed guavas along with the remaining water in a mixer till it forms a smooth pulp. Measure the pulp and pour into a heavy bottom vessel. Add an equal amount of sugar to the pulp, i.e. if you get six cups of pulp, add six cups of sugar.

4.  Now place the pulp and sugar on the fire and keep stirring continuously.

5.  Once the mixture begins to boil, add the lime juice and continue stirring. Keep stirring till the mixture thickens.

6.  When the mixture begins to thicken and boil vigorously, add the colour so that you get a deep red colour.

7.  You know the mixture is ready when it starts to leave the sides of the vessel. Now it’s time to add the butter. Lower the flame to medium heat and keep on the fire for another 3 – 5 minutes.

8.  Grease a flat plate / tart with some butter or ghee and pour the hot mixture onto it. Flatten the surface till it is smooth and leave to set and cool for approximately 6~8 hours.
