Sponge Cake

This is the recipe for a basic sponge cake. It may be eaten plain or with jam in the middle and dusted on top with icing sugar. These also make delicious cupcakes.

These cupcakes may be decorated with whipped cream and used for a cupcake bouquet.


Flour – 225 gms.

Butter – 225 gms.

Sugar – 225 gms.

Eggs – 3

Baking Powder  – 1 tsp

Vanilla essence – 1 tsp


  1. Sift together the flour and baking powder.
  2. Using the paddle attachment of the beater, cream the butter and the sugar.
  3. Add the eggs, one at a time and continue to beat till the mixture is nice and fluffy.
  4. Now add the vanilla essence.
  5. Fold in the flour into the sugar and fat mixture till it is combined. Do not mix for too long or use the beater once the flour is added.
  6. Preheat the oven to 160°C for around 10 minutes.
  7. Pour the batter into the cake tin and level the batter. This amount of batter would typically occupy an 8” round tin. If you are baking cupcakes, pour the batter till it fills approximately ¾  the cup.
  8. Bake the cake for approximately 45 minutes or till a skewer inserted comes out clean. Cupcakes typically take 12~15 minutes.
