Basic Doughnut recipe
Flour – 250gms
Butter – 50gms
Active dry yeast – 7gms
Powdered sugar – 50gms
Crystal sugar – 12gms
Milk – 150~180 ml, as required to knead the dough
A dash of vanilla essence
1 tsp salt (a little less if salted butter is used)

1. Mix together the sifted flour, salt and powdered sugar.
2. Make a well in the centre. Place the crystal sugar and yeast in the well.
3. Heat the milk till luke warm. Add the vanilla essence to the milk. Pour this mixture over the yeast and sugar. Do not pour whole amount…..mix as much required to form a stiff dough.
4. Knead the dough till stiff. Mix the butter towards the end of mixing.
5. Leave the dough covered with a wet kitchen towel till it doubles in size.
6. Once doubled, knock the dough down and knead again.
7. Roll out the dough till it is 1/4 inch thick. Cut out the doughnuts and leave to rise for around half an hour.
8. Deep fry these doughnuts and top with either icing sugar or chocolate.
