Crunchy Christmas Biscuits
Category: Baked Bites, Christmas Special
This is similar to the Christmas Nankhatai recipe, only that it has a lovely crunch (more like a biscuit than a cookie) and that the tutti-frutti is mixed with the dough rather than just decorating the nankhatai on the top. I call them Christmas Biscuits since these are white with red and green tutti-frutti.
Ingredients:All purpose flour – 250gms
Powdered granulated sugar – 125 gms Baking powder – 1/4 tsp
Water – approximately 1/4 cup (may be a little more, but definately not more than 1/2 cup)
Ghee (clarified butter) – as required to form a soft dough (similar to a cookie dough), you will require approximately 125gms.
Tutti-Frutti (red and green colours of candied raw papaya) – quantity as per your choice Method: 1. Sift the flour and baking powder. Add the powdered sugar. 2. Heat the ghee. Add approximately 6 tbsp initially into the flour and sugar mix and knead. 3. Add the water and continue to knead. 4. Now add the ghee, a tablespoon at a time till you get the dough of a soft consistency. 5. Leave the dough to rest for approximately 1 hour. 6. Roll out the dough and cut into desired shapes. Lay on a baking tray. 7. Preheat the oven to 130 Deg. C and bake for approximately 15 minutes. Try to flip one of the biscuits. If the base turning golden brown, it means the batch is done. 8. Cool on a wire rack. When just out of the oven, the biscuits may seem soft, but these harden as they cool. Enjoy! Merry Christmas !!!
